Anderson woman may have SC's largest sweet spud

ANDERSON, SC (FOX Carolina) -

An Anderson woman said Wednesday she may have grown the largest sweet potato in South Carolina history.

Diana Peterson said she and her husband had grown all types of vegetables in their backyard garden, but this was the first year that they planted sweet potatoes. She said about two weeks ago, she noticed part of one sticking out of the ground.

Once it was dug up, the spud weighed in at 8 pounds and measured about 10 inches long.

"We didn't try to grow this," Peterson said. "We just tried to grow sweet potatoes. We had no idea this thing would grow like this."

The potato even made a trip to the area flea market, where shoppers gawked and speculated about the shape of the vegetable.

"Everybody at the Jockey Lot said it looked like a seal, a baby seal," Peterson said.

Peterson said she contacted the agriculture experts at Clemson University, who told her it may be the largest ever grown in the state.

What's next for the massive spud? The potato could make enough tasty pies to feed about 64 people, but Peterson said she'd rather preserve this one.
